  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 cup (8 ounces) sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • 1/3 cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup chopped pecans

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs, sour cream and vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture and beat until combined. Pour half the batter into a greased 13-in. x 9-in. baking pan.
  • In a small bowl, combine topping ingredients; sprinkle half of topping over batter. Add remaining batter and topping. Bake at 325° for 40 minutes or until a knife inserted near the center comes out clean. Cool on a wire rack. Yield: 12-15 servings.

Tried this 3/12....used self-rising flour though.....3 of my children liked it.

Topping Ingredients:

  • 1/2 cup brown sugar
  • 1/4 cup all purpose flour
  • 1/4 butter
  • 1 tsp. cinnamon

Cake Ingredients:

  • 1 1/2 cups all purpose flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 3/4 cup sugar
  • 1/3 cup melted butter
  • 1/2 cup milk
  • 1 tsp. vanilla extract

*Powdered sugar optional

1) In a bowl, combine topping ingredients, crumbling butter with a fork. Set aside.

2) Combine flour, baking powder and salt in a bowl. In another bowl, beat egg, sugar and melted butter together. Add milk and vanilla. Stir in flour mixture and mix well.

3) Pour batter into a greased and floured 8 or 9 inch cake pan. Sprinkle topping on top. Bake at 375 degrees for 25 minutes, or until cake is done (check by sticking toothpick in center of cake, if it comes out clean it’s done). Sprinkled powdered sugar over top (optional). Cool and cut into slices. Serve.

This recipe was printed in The Evening Independent (a St. Petersburg newspaper, now defunct) in 1974. I still have the yellowed, butter spattered copy. It is so quick to put together, and I usually have everything I need to make it when the sweet munchies hit me. I also make this when I have guests visiting, and it doesn't have to be just for mornings, either.

Pretty Good Coffeecake

1 Tablespoon sugar
1 egg
2 cups Bisquick
2/3 cup milk (or water)
2 Tablespoons melted butter

1/3 cup sugar
2 teaspoons cinnamon
2 Tablespoons chilled butter
2 Tablespoons Bisquick

Preheat oven to 400 degrees. Grease a 8-9" cake pan. In a medium size bowl, mix sugar, egg, Bisquik, milk and butter. Beat hard and fast with a spoon for a minute or so. It is best to mix the egg, sugar and butter together before mixing with dry ingredients but it’s not necessary. Spread batter into pan and let stand until topping is ready.

In a small bowl, mix sugar cinnamon, butter and bisquick with a fork. Mix until crumbly. DO NOT mix too long or the topping will become creamy and useless.

Sprinkle topping crumbs over cake batter and put in oven for 20-25 minutes.

Easy Coffee Cake

Cake Ingredients:
1 1/2 cups sugar
1/2 cup butter
2 eggs
1 cup milk
3 cups flour
4 tsp baking powder
1 1/2 tsp salt

Topping Ingredients:
3 tbsp flour
3/4 cup brown sugar
3 tbsp butter (softened, not melted!)
2 tsp cinnamon

Cream sugar and butter. Mix in eggs.  Mix in remaining ingredients.  Pour 2/3 of the mixture into a 9x13 pan.   Add topping and then the remainder of the batter.  Bake at 350 for about an hour.
I also like to make an icing out of melted butter and powdered sugar and drizzle it over the top
