Recipe of the week, March 24: Colorful Vegetables

Colorful Vegetables

1 carrot, peeled

1 yellow squash

1 zucchini

1 red bell pepper

1 red bell pepper

1 yellow bell pepper

1 onion, sliced

2 garlic cloves, chopped

1 tablespoon olive oil

1 tablespoon chopped fresh basil, thyme, or oregano

salt & pepper

Preheat oven to 350. Cut vegetables into julienne strips, 1"x3". Blanch carrot strips (bring water to a boil in small saucepan. Drop in carrots. Boil 3 minutes. Drain.) Mix all vegetables together or separate on large sheet of aluminum foil that has been laid on a cookie sheet pan. Sprinkle with herbs and drizzle with oil. Fold aluminum foil and seal. Bake 25 minutes.
