My grandma always dipped them in egg and flour then fried them and put a slice of cheese on them.

Bread crumbs will fry up crispier than the flour.  And, you can make those yourself.

Ultimately, I use panko bread crumbs mixed with a handful of fresh grated parmesan cheese.  Best coating ever!

 good idea! i have parmesan cheese and a whole box of panko bread crumbs. what do i use to help the parmesan and bread crumbs stay on the patties?

Cut them about 1/4" thick.  Dredge in flour, dip in egg, then in panko/parm mix.  You can fry these or you can lay them in a baking dish and lightly spray the top with either butter spray or olive oil spray and bake until coating is golden and crisp.

No. The only recipe I have for eggplant is baba ganush.
