Spicy potato & tuna skillet

I made this yesterday and the kids loved it. Served it with avocado slices & corn tortillas. You cant beat quick and cheap! Lol!

5 russet potatoes , peeled and cubed
1/2 onion, chopped
2 minced garlic cloves
2 celery stalks, chopped
2 cups crushed tomatoes
1 can of tuna
Juice of 1 lime
A couple teaspoons each of Salt, black pepper, paprika and cayenne pepper.

I like to blanche the potatoes before adding them to the skillet.

Sautee onion, garlic and celery. Add the potato, cook until halfway done. Add 1 1/2 cups of tomato cook for another 8 or so minutes. Add the tuna and the rest of the tomato. Cook until potatoes are tender. Remove from heat and top with the lime juice.

sounds super yummy! I'm trying to not eat potatoes so I'm going to try this with roasted cauliflower instead
