Years ago my roommate and I tried a recipe that grilled the bellas and had a roasted red bell pepper "paste" that you put on them.  DELISH!

My sister won't eat mushrooms so I haven't made any recently.

We have grilled them with a little olive oil and seasoned with garlic, salt, and pepper.

Last Good Friday, we marinated portabello mushrooms in A-1 and grilled them like steaks with carmelized onions, new potatoes, and asparagus.

I've grilled them, and used them like hamburger patties (they're very meaty - was a great meat substitute during my daughter's vegetarian days).

Recently, I've been making hungry-girl.com's 'Bella Asada Fajitas.  www.hungry-girl.com/newsletters/raw/1518.  They're fantastic!

I love them grilled and splashed with a little balsamic vinegar.

I have also stuffed them and baked them and also use baby portobellos often in roasts and stews (I prefer their beefier flavor to plain button mushrooms).
