Game Hens stuffed with Lemon and Goat Cheese

Okay, so they are in the skillet with a lowered temperature simmering away all happy and content. I'm sitting here in front of my computer freaking the fuck out. I did what it told me too and I still lost some of the stuffing.:(
I figured it out 3/4 of the way through though and lost no more. :)

Now, I am just wishing and praying to all the cooking gods up there, that this turns out tasting as good as it smells when it's done. That what I messed up isn't enough to ruin the dish.

Tomorrow night, I'll be attempting hot wings for the first time ever.
Wish me luck on that.

I'll update in responses how this dish turns out for me tonight.
Also making some peas, and some butter noodles to go with the Game Hens Stuffed with Lemon and Goat Cheese.

It was the first time that I had attempted anything like that with a game hen. THey are so small. LOL

I need better shears... It tasted delicious. The different flavors mingled well together and gave a huge flavor explosion in the mouth. My husband just heated up the last half of a game hen and is now eating it. He loved it. We will be making this again. Probably soon. Tons of flavor.

It's on page 24. Click on the picture of it on the left. It will enlarge the picture quite a bit, but then you can hold the left mouse button after clicking and move the image so that you can read the recipe.

It isn't hard. I just never worked with a game hen before. I've only ever cooked game hen once and that was just to salt and pepper the outside of it and stick it in the oven. 

Next time it will come out looking better. *giggles* The flavor was amazing.
