Easy Chicken and Cheese Chilaquiles

Delicious!  I baked my chicken breasts instead of using store bought rotisserie chicken but you can use that too. :)


Ingredients

1
can (18 oz) Progresso™ Recipe Starters™ creamy three cheese cooking sauce
1
can (4.5 oz) Old El Paso® chopped green chiles, undrained
1
box (4.6 oz) Old El Paso® taco shells (12 shells)
2
cups shredded deli rotisserie chicken (from 2-lb chicken)
2
cups shredded Cheddar or pepper Jack cheese (8 oz)
  • 1 Heat oven to 400ºF. Spray 2-quart casserole with cooking spray. In medium bowl, mix cooking sauce and chiles.
  • 2 Break up taco shells into bite-size pieces. Place half of pieces in casserole. Top with shredded chicken, half of the cooking sauce mixture and half of the cheese. Repeat layers with remaining ingredients.
  • 3 Bake 20 to 25 minutes or until cheese is melted and top is golden brown.

mine is similar to this except its the cambelles or whatever recipie

 i use  their fiesta nacho cheese soup, some  milk mixed in, diced tomatoes with green chilis, and also some salsa,  shreaded chicken breasts or i dice them up, i roll it in  flour tortillas pour the soup over the top and put a bunch of shreadedcheese and bake it. comes out awesome!! everyone devours it!

 at times i make it  earlier in the day when its less hectic then i put it in the fridge,  so i just pop it in the oven later for dinner. i generally have to make 2 batches because they go so fast everyone wants more and we are just a family of 4.

Mmmm I love dhs chilaquiles, but his moms is wayyyy better. They make theirs way different though.
We eat ours with eggs sunnyside up on top. Oh so good!
