Beets?????

Yesterday morning my neighbor brought over beets from his garden. They look so good, but I need a recipe. What can I do with these?

Cut them into quarters drizzle with olive oil, salt and pepper. Roast them at 400 until they are tender.

You can pickle them. It's really them only way I like them.

Thats the only way i like them as well but i have always used canned...never used fresh.

My mom plants beets just for pickling. Same with okra. We've even pickled asparagus but I'm not a fan of it pickled.
