Yesterday morning my neighbor brought over beets from his garden. They look so good, but I need a recipe. What can I do with these?

LOL  It'll come off.

I can beets every year, about 1/2 bushel in a day at the very least.  Talk about PURPLE HANDS!

Well, I'm doing what Becky said. So far everything is looking good!

I've never cooked beets before.  That's awesome that your neighbor brings you fresh veggies from the garden!

That was Sunday. We had some leftovers. Last night we had chicken with asparagus and a cold pasta salad. At the last second, I decided to mix the leftover beets with the pasta salad, and it was awesome! So keep that in mind, too. They're way more versatile than I assumed.
