Welcome to Day 7 of the Recipe Box Challenge! Each day we'll give you a new food theme to add to our recipe box!

Your theme for today is: Salads and Side Dishes.

Remember, you don't have to cook something each day -- though of course we'd love to see pictures if you whip something up! You can do any of the following:

  • Post a photo and include a recipe of a dish you've made in the past that fits the theme.
  • Post a photo and include a recipe you've seen online, that you'd like to try based on the theme.
  • Post a recipe based on the theme even if you don't have a photo.
  • Post a recipe and/or idea for leftovers based on the theme.

 Chicken Waldorf Salad
2 cups diced chicken
½ cup diced celery
1 cup apples, diced (leave skin on)
½ cup raisins
½ cup diced pecans
1 cup mayonnaise
1 cup Cool Whip
2 Tablespoons maple syrup (or substitute 2 T. pancake syrup)
Mix all ingredients together. Serve on lettuce leaf or on croissants.

 Cucumber Salad
1-2 cucumbers
1 cup sour cream
½ tsp. seasoning salt
3-4 green onions, chopped
1 tsp. fresh dill, chopped
Peel and slice cucumbers. In mixing bowl, mix sour cream, seasoning salt, onions and dill. Gently stir in cucumbers. Chill.

 Coleslaw
1/4 cup sugar
1 Tablespoon vinegar
1 cup mayonnaise
1 teaspoon celery seed
10 oz. bag  coleslaw mix
Mix first 4 ingredients together, then add the coleslaw mix (you can shred your own cabbage and carrots if you wish)

Asian Broccoli Salad

Yield: 12-15 servings

Asian Broccoli Salad

Ingredients

  • 2 pkg chicken flavored ramen noodles
  • 1 cup slivered almonds
  • 1 head broccoli, chopped in small pieces
  • 1/2 red onion, diced
  • 1 red bell pepper, chopped
  • 1 cup sunflower seeds
  • 1 cup oil
  • 1/2 cup sugar
  • 1/3 cup vinegar
  • 2 pkts ramen noodle seasoning

Instructions

  1. Break ramen noodles in small pieces. Set seasoning packets aside for later.
  2. Toast broken noodles and almonds in shallow pan at 350 degrees for 10-15 minutes. Stir several times during toasting.
  3. Combine broccoli, onion, red pepper, sunflower seeds, and toasted noodles and almonds in large bowl.
  4. Whisk together oil, sugar, vinegar and seasoning packets in a small bowl.
  5. Pour over salad right before serving and toss to coat.

Copycat KFC Macaroni Salad (from www.recipezaar.com)

  • 16 oz. dry elbow macaroni, cooked, drained and cooled
  • 2 Tbsp. instant minced dry onion
  • 2/3 c. chopped celery
  • 2/3 c. chopped sweet pickles (I use drained sweet pickle relish)
  • 2 Tbsp. chopped pimento (optional)
  • 1/2 tomato, seeded and chopped

Dressing:

  • 1/2 c. sour cream or plain yogurt
  • 1 - 1 1/2 c. Miracle Whip
  • 2 Tbsp. prepared mustard
  • 3 Tbsp. sugar (I cut this down to 1 Tbsp.)
  • 1 tsp. onion salt
  • 1/2 tsp. black pepper

Combine dressing ingredients and set aside. Combine rest of ingredients in large bowl and stir in dressing until well mixed. Chill before serving. Store in refrigerator.

Cheesy hash browns

  • 2 lb. frozen diced hash browns (let thaw)
  • 1 c. chopped onion
  • 1 can cream of chicken soup
  • 1 stick butter, melted
  • 16 oz. sour cream
  • 8 oz. shredded cheddar cheeese
  • crushed potato chips (BBQ are GREAT on this)

Combine all ingredients but chips.  Spread into a greased 9 x 13 baking dish.  Sprinkle with crushed chips and bake at 350° for one hour.

This is a fabulous and easy side dish to throw together in a minute and bake alongside the main entree!

Creamy Baked Rice

  • 3/4 c. uncooked white rice
  • 14 oz. can chicken broth
  • 10 oz. can cream of mushroom soup
  • 4 oz. can mushroom pieces
  • minced onion, to taste
  • 3 Tbsp. butter, cut into small pieces

Mix all ingredients together and pour into a greased casserole dish.  Bake at 350° for one hour.

Oven Fried Potatoes

  • 6 medium Russet potatoes
  • 2 tbsp. grated Parmesan cheese
  • 1 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. paprika
  • 1/4 tsp. black pepper
  • 3 - 4 Tbsp. vegetable oil

Peel (optional) and cube potatoes (3/4 to 1 inch cubes.)  Place in a large resealable plastic bag.  Combine Parmesan cheese and seasonings; add to bag, seal, and shake to coat (be sure to hang onto the resealable end -- can have messy results if you don't)

Pour oil into a 15 x 10 inch pan or cookie sheet and tilt pan to coat evenly with oil.  Pour potatoes into pan and spread into a single layer.  Bake uncovered at 375° for 40 to 50 minutes.

Ambrosia Rice

  • 16 oz. pineapple tidbits in juice, drained
  • 15 oz. can mandarin oranges, drained
  • 2 c. cooked rice, chilled
  • 1/2 c. chopped pecans, walnuts, or almonds
  • 2 c. seedless red grapes
  • 1/2 c. chopped dry apricots
  • 8 oz. container strawberry yogurt (can also be raspberry or peach)
  • dash of cinnamon (optional)

Mix thoroughly.  Serve immediately or cover and refrigerate for later, up to 2 days.

Layered Party Slaw (this is a favorite of ours)

  • 1 small head cabbage, shredded
  • 1/2 medium head cauliflower, cut into bite size pieces
  • 8 strips bacon, cooked and crumbled
  • 2 c. frozen green peas, thawed
  • 2 c. fresh mushrooms, sliced
  • 1/2 c. green onion, sliced
  • 1/2 c. grated Parmesan cheese
  • 1 1/4 c. Marzetti slaw dressing
  • 1 tomato

In a large glass serving bowl layer the first 7 ingredients, using only 1/2 of the bacon.  Top with slaw dressing and remaining bacon.  Cover and refrigerate several hours or overnight.  Cut tomato into wedges and arrange on top of the salad before serving.
