Welcome to Day 9 of the Recipe Box Challenge! Each day we'll give you a new food theme to add to our recipe box!

Your theme for today is: Seafood!


One lucky member who participates in today's activity will receive a CafeMom Mug!

Remember, you don't have to cook something each day -- though of course we'd love to see pictures if you whip something up! You can do any of the following:

  • Post a photo and include a recipe of a dish you've made in the past that fits the theme.
  • Post a photo and include a recipe you've seen online, that you'd like to try based on the theme.
  • Post a recipe based on the theme even if you don't have a photo.
  • Post a recipe and/or idea for leftovers based on the theme.

I hate seafood! I won't even let hubby cook it in the house. Sorry I have no recipes!

We don't do seafood a lot since its so expensive but we love garlic shrimp.

 I dont like seafood but my dh and kids do.  So I wrap crab legs in foil and put on the grill.   8-10 minutes they are steamed.

My husband likes salmon on the grill.   I season both sides and grill about 6-8 minutes a side

I like seafood, except for clams and oysters.  I buy steamed shrimp and serve them with cocktail sauce.

Well this isn't really a recipe, but it's an easy and quick fix.

Grilled tilapia 

season tilapia filet with salt and pepper.  Squirt a little lemon juice on it.  On my heated George Forman grill.  Place fish , cook for about 5-7 minutes.  Enjoy.

 I do this atleast once a week for a quick lunch :)

We love to grill salmon...we found a sauce..it a caribean lime sauce...we add limes and cilantro on top...

Ah!  I love to cook seafood - I don't have a lot of recipes, but yummo!!!

 

This one is fantastic!  I don't use quite as much fish sauce as it calls for - I use about 1/2 of it.

 

Red Thai Coconut Curry Shrimp

Servings: 4

· Serving Size: 1/4th  Old Points: 3 pts • Points+: 3 pts

Calories: 135

· Fat: 4.4 g  Protein: 18.5 g  Carb: 4.7 g  Fiber: 0.9 g 


1 tsp oil

 

4 scallions, whites and greens separated, chopped

 

1 tbsp Thai red curry paste  

 

2 cloves garlic, minced

 

1 lb shrimp, peeled and deveined

 

6 oz light coconut milk

 

2 tsp fish sauce  

 

1/4 cup fresh cilantro, chopped

 

salt to taste

 


In a large nonstick skillet, heat oil on medium-high. Add scallion whites and
red curry paste and sauté one minute. Add shrimp and garlic, season with salt and cook about 2-3 minutes. Add coconut milk, fish sauce and mix well. Simmer about 2-3 minutes, until shrimp is cooked through. Remove from heat, mix in scallion greens and cilantro. Serve over rice and enjoy!
