Creamy Spinach Tomato Tortellini

 We make this often for dinner. It has really become a staple at my house. Sometimes to make it lighter,  I skip the cream and use 3 cups of low fat milk. I also double the sauce recipe and put a whole bag of baby spinach in to up the veggie content. My kids love this recipe!
 
Spinach Tomato Tortellini  
Original recipe makes 6 servings
  •  1 (16 ounce) packagecheese tortellini
  •   1 (14.5 ounce) candiced tomatoes with garlic and onion
  • 1 cupchopped fresh spinach

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 1/2 teaspoonsdried basil

  • 1 teaspoonminced garlic

  • 2 tablespoonsall-purpose flour

  • 3/4 cup milk

  • 3/4 cupheavy cream

  • 1/4 cupgrated Parmesan cheese

Directions

  1. Bring a large pot of water to a boil. Add the tortellini, and cook until tender, about 10 minutes.
  2. While you get the tortellini going, combine the tomatoes, spinach, salt, pepper, basil and garlic in a large saucepan over medium heat. Cook and stir until the mixture begins to bubble.
  3. In a medium bowl, whisk together the flour, milk and cream. Stir this mixture into the saucepan along with the Parmesan cheese. Heat through, then reduce heat to low, and simmer until thick, about 2 minutes.
  4. Drain the tortellini, but do not rinse, then pour them into the saucepan with the sauce. Stir to coat, and serve.

I'll have to try this one. I make something similar from a Pampered Chef cook book-brown butter ham and tortellini or something like that.

Yum....I love tortellini!  My family doesn't like it so much though so we don't have it often.

 This sounds really good. I would only add the spinach for the last two minutes, I find the taste is better when the spinach doesn't cook very long.

Let me clarify- I use 3 cups of skim milk when I DOUBLE the recipe. 1 1/2 cups for a single recipe.
