Chili

I am tired of spending $6-$9 a week on chili for my husband's lunch. Anyone have a tried and true recipe for chili? The spicier, the better. And a big batch is good because I could freeze it in portions for him, I'm not big on chili but he loves it.

I use salsa with mine and no beans but you can add a can of chili beans to it.

Mine is:

1 1/2 pound ground hamburger or turkey, browned and drained
1 pint salsa (whatever temperature you like)
1 can diced tomatoes (I use ones I've canned)
1 can beans

When I brown the meat I put spices in the meat too, chili powder and seeds plus salt and pepper. I then add everything to a crockpot a let simmer on low for about 8 hours. I also will add spices to the pot if needed.

I use a homemade salsa that I make just for cooking.

I use:

1 lb ground meatloaf mix (pork, beef and veal) or ground turkey

1 bell pepper, chooped

1/2 onion, chopped

1 jalapeño pepper, finely diced.  You can adjust the heat by leaving the ribs and seed if you like it hot, or removing them, if you like it mild.

1 can pink beans

1 can pinto beans

1 can diced tomatoes

1 can tomato ssauce

cumin, chili powder and paprika (I eyeball it, so I'd have to estimate maybe 1-2 tsp of each?)

salt and pepper to taste

Louisiana hot sauce to taste.


Brown and drain meat.  Add in chopped peppers, onion and jalapeño and spices, and sauté until softened.  Pour in beans, tomatoes and tomato sauce.  Cook over med heat until flavors blend and it is heated through.  Add not sauce to taste to pot or individual bowls (easier to adjust for different levels of heat this way).

I've only made a white chicken chili.

 I brown 1-2 lbs of hamburger, drain it. I add 1 can of tomato sauce, 1 can of diced tomatoes with jalapenos, and 1 drained can of red kidney beans. I season it with cumin, garlic, chili powder, and pepper. I don't use any salt because usually the tomato sauce has enough.

Thanks for the recipes ladies, 1mt later I finally made my first chili. It turned out well but way too spicy for me. DH will love it though.
