½ teaspoon baking soda
½ teaspoon salt
3 eggs, room temp
1 cup sugar
2 tablespoons butter, softened
1 teaspoon vanilla extract
2 teaspoon lemon extract
⅓ cup lemon juice
½ cup oil
zest of one lemon

Glaze:
1 cup powdered sugar

Preheat oven to 350. Grease and flour a 9 × 5 loaf pan. In a large bowl, combine flour, baking soda, baking powder and salt.
In a medium bowl, combine eggs, sugar, butter, vanilla extract, lemon extract and lemon juice with a mixer until blended.

Pour wet ingredients into the dry ingredients and blend until smooth. Add oil and lemon zest and mix well. Pour into loaf pan and bake for 45 minutes until toothpick comes out clean. (It took an hour in my oven). Remove from oven and pour glaze over it, then cool in pan on a rack. Glaze - whisk to combine

Do you have crescent rolls and chocolate chips? Roll choc chips in individual triangles starting with wide end, & tucking sides in as you roll. Bake until rolls done. Eat.

Refrigerated pie crust, apples, cinnamon sugar. Slice apples and lay on dough, leaving a 2 inch border. Fold edges over apple slices. sprinkle with cinnamon sugar, dot with 2-3 tbsp butter and bake until crust is golden. Drizzle with simple glaze made with powdered sugar, butter, vanilla and milk.

I love to put marshmallows, chocolate chips, and peanut butter rolled into a tortilla shell like a burrito and brown it in a skillet, they are so delicious.

Honey Bun Cake

Cook time: 45 Min  Prep time: 15 Min  Serves: 12-14

Ingredients

CAKE
1 box yellow cake mix
4 large eggs
1 c sour cream
3/4 c vegetable oil

FILLING
1 c brown sugar
3 tsp cinnamon
chopped pecans-optional

GLAZE
3 c powdered sugar
1/2 c milk
2 tsp vanilla
I HAVE FOUND IN THE LAST 2 CAKES I'VE MADE THAT NOT POKING HOLES IN IT WORKS JUST AS WELL. THE GLAZE TENDS TO GO A LOT FURTHER THAT WAY TOO BECAUSE THERE'S NO HOLES FOR IT TO FALL DOWN INTO. IT TRULY IS JUST PERSONAL CHOICE.

Directions
1. Preheat oven to 325°. In a large bowl combine cake mix, eggs, oil and sour cream. Stir until moistened. Now mix on medium speed for 2 minutes. Batter will be thick.
2. Grease AND flour a 9x13 cake pan. Pour enough batter to cover the bottom of the pan.
3. Mix filling ingredients then sprinkle over cake batter evenly.
4. Pour the rest of the cake batter over the brown sugar and cinnamon mixture and bake at 325° for 45 minutes. Remember oven temps vary so if you feel it is done before the 45 minutes, test it first and if so, pull it out of the oven. I would say check it at 40 minutes if you are concerned your oven temp runs hot.
5. While the cake is still hot, poke holes in it. Mix the glaze then pour evenly over the hot cake. Enjoy!

6. ***You may add nuts of your choice to brown sugar mixture. Pecans are heavenly in this recipe.***

SOUR CREAM POUND CAKE

INGREDIENTS:

1 cup (2 sticks) unsalted butter, room temp.
3 cups sugar
6 large eggs, separate yolks and whites
3 cups sifted unbleached all purpose flour
tsp. salt
tsp. baking soda
1 container (8 0z.) sour cream (I goofed the first time I made
this and added the entire 16 oz container.
Takes about 20 - 30 minutes longer to bake)
1 tsp. pure vanilla extract
1 tsp. pure almond extract
10-inch tube pan for baking

1. Heat oven to 300. Butter and flour 10-inch tube pan with
removable bottom. Cut out piece of wax paper to fit bottom of pan
and slide into place. (Can use parchment paper-make sure to
butter side facing cake)

2. In medium size bowl, beat together butter and sugar on medium
speed until thoroughly blended, about 5 minutes. Beat in egg
yolks.

3. In large bowl, combine sifted flour, salt, and baking soda:
sift two more times. In a separate bowl combine sour cream with
the vanilla and almond extracts. Beginning and ending with the
flour, alternately beat flour mixture and sour cream mixture into
the butter mixture.

4. In a large clean bowl, with clean beaters, beat egg whites
until stiff but not dry peaks form. Stir one-third of whites into
batter. Fold in remaining whites. Spoon into prepared tube pan.

5. Bake in 300-degree oven 1 1/2 to 1 3/4 hours or until cake
tester inserted in center comes out clean. Transfer pan to wire
rack; let cool for 5 minutes. With long, thin knife, separate
sides of cake from pan and from tube. Remove cake from pan to
wire rack; let cool completely.
