Freezer Friendly Sweet and Sour Meatballs

A friend made these for our freezer meal swap and I really liked them. Serve over rice!


Sweet and Sour Meatballs

INGREDIENTS*:


1 bag of frozen meatballs or prepare your own meatballs and cook fully.
1 cup packed brown sugar
2 tablespoons cornstarch
1 can (20 oz)crushed pineapples** in juice, drained and juice reserved
2/3 cup white vinegar
2 tablespoons soy sauce

1/2 cup chopped carrots
1/2 cup finely chopped green bell pepper***



DIRECTIONS:

1. Mix brown sugar and cornstarch in medium saucepan.

2. Add enough water to reserved pineapple juice to measure 1 cup; stir into sugar mixture. Stir in vinegar and soy sauce.

3. Heat to boiling over medium heat stirring constantly. Boil and stir 1 minute. Stir in pineapple, carrot and bell pepper.

4. Use sauce immediately, or cover and refrigerate for 2 weeks or freeze up to one year. (Ours were frozen with the meatballs mixed in.)

Interesting. . I like sweet and sour but not sure about ot being in meatballs

I was hesitant at first but it was REALLY good.

 These sound great....I usually make the frozen Walmart brand with Sweet Baby Ray's....this would be something different and I love pineapples.

I've had this too and i put it over rice. Well, actually I do half bbq and half grape jelly.

 It is good...we serve them over mashed potatoes too...yum

 I've had these before and they're very good, but we like it with pineapple, red & green peppers cut in large chunks-similar to sweet & sour that you get in Chinese restaurants.
