Spicy Pop Pulled Beef
adapted from a Pioneer Woman Recipe
Serves 8 - 10
3 or more pounds of slow roasting meat
1 11oz can of Chipotle peppers in adobo
1 12oz can of pop
1 large onion
Preheat oven to 300 degrees.
Peel the onion and cut it into 1/4 inch slices. Lay them in the bottom of a large dutch oven.
Place the meat on top of the onions. Pour can of chipotles on top of the meat. Add the can of pop to the pan.
Salt and Pepper the meat, put the lid on and place it in the oven.
Forget about it for 6 hours.
After 6 hours, remove the meat. Strain out the onions and peppers.
Shred the meat and place back into the cooking liquid.
Serve on a bun with crisp lettuce or coleslaw. Serve it by itself with mashed potatoes.

*This can be made in a crock pot as well. On low for 8-10 hours or on high for 4-6 hours.
