My neighbor brought over this amazing pie. It has the consistency of pumpkin pie but it's yellow, has a distinct lemon flavor, and is made with yellow squash. Does anyone have any idea what this is? And I can't ask her because she isn't available right now. I've even Googled. Nothing.

This squash pie is a dessert pie made with cooked summer squash and other ingredients.

Cook Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • 5 medium summer squash, sliced
  • 1/4 cup melted butter or margarine
  • 3/4 cup sugar
  • 1 tablespoon lemon or vanilla extract
  • 1 tablespoon all-purpose flour
  • 2 egg yolks, beaten
  • dash of salt
  • baked pie shell, 9-inch

Preparation:

Steam squash or cook in a little boiling salted water until tender. Drain squash and mash. Combine butter, sugar, and lemon extract; stir in flour, beaten eggs, and mashed squash. Pour squash mixture into baked pie shell; bake at 375° for 25 minutes, or until firm.

So is summer squash yellow squash? I admit I don't know much about squash.

I'm not all that familiar with squash but I'm thinking its the yellow squash that looks like zucchini

I've never made a squash into a pie but it could be done. Summer squash is yellow too.
