I use meatloaf mix (which is a mixture of pork, beef and veal), breadcrumbs - which I soak in milk until it looks like wet sand, 1 egg, salt, pepper, Italian seasoning, onion and garlic, finely chopped.

I have several recipes. The problem is, everytime I make meatballs, they fall apart. No matter how many adjustments I make, no matter how little or how much I handle the meat. They fall apart during cooking. Apparently meatballs aren't my thing.

The meatball base in this one was very simple but very delicous too...and the sauce was awesome if you are so inclined.

This is the way I make them. Can also be made with all beef.

Parmesan Meatballs
1 lb. Ground beef
½ lb ground pork
1 cup Parmesan cheese
1 cup milk
1 egg
1 cup soft bread crumbs
½ cup parsley
1 clove garlic, minced
1 teaspoon seasoned salt
¼ teaspoon pepper
½ teaspoon oregano

Combine all ingredients. Shape into meatballs. Place on baking sheet pan.
Bake at 350 until brown, about 30 minutes.

This isn't a basic recipe but they are super yummy. I do a lb of ground hamburger, half a packet of chicken stuffing mix, not prepared, 1 egg and season as you wish. Roll the meatballs and place in casserole dish. Then mix 1 can cream of mushroom, 1 can cream of chicken, and 1/2 cup of milk and pour over meatballs. Bake at 350 40-45 mins. Sooooo yummy

I buy a bag of frozen homestyle meatballs and throw them in the crockpot on hight for 4-5 hours with equal parts of grape jelly and ketchup. Delicious sweet and sour meatballs. I usually spoon them over orzo.
