What would you make with this ingredient??
I make this casserole with both sliced and mashed eggplant, depending on what mood I'm in. Both are delicious!
Mama Dip's Eggplant Casserole
Prep: 5 min. Cook: 45 min.
Yield: 6 Servings
2 medium eggplants peeled and cut into 1/4 inch slices
4 tablespoons (1/2 stick) butter melted
1/4 cup whole milk
One 10 3/4 oz. can cream of mushroom soup
2 large eggs beaten
1/2 cup freshly grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup cracker crumbs mixed with 2 tablespoons melted butter
Preheat oven to 375.
Place the eggplant in a large pot with enough salted water to cover, bring to a boil, reduce the heat to low, and cook till tender, about 15 minutes.
Drain all the water from the pot, add the butter, milk, soup, eggs, cheese, salt, and pepper and stir till well blended. Scrape the mixture into a 1 1/2 quart casserole or baking dish, sprinkle the buttered cracker crumbs evenly over the top, and bake till golden, about 30 minutes. Serve hot. Yield: serves 6
I got this recipe from the Cookin' Cajun Cooking School in New Orleans. Not being a big fan of eggplant, this was a delightful surprise. It's really good.
Fried Eggplant Fingers1 eggplantsalt2 eggs1/2 cup milkTabasco to taste1/2 cup flour1/4 teaspoon white pepper1/4 teaspoon black pepperCut the eggplant into sticks, about 3"x1/2"x1/2", about the size of a finger.Salt eggplant fingers and let sit in colander for 20 minutes. Rinse and dry well. Mix together eggs, milk and Tabasco and set aside. Mix flour, white pepper and black pepper. Dip fingers into flour mixture, then into egg mixture and then into bread crumbs. Deep fry slowly on both sides, just till golden. Drain on paper towels.
1 large eggplant, cubed 1/4 to 1/3 cup olive oil
1 onion, thinly sliced
1 chopped pepper (red or green)
2 to 4 crushed garlic cloves
4 small zucchini, chopped
4 tomatoes, chopped
Salt and pepper to taste
1/3 cup chopped fresh basil
Salt the eggplant, drain in a colander for 1 hour, and pat dry. Heat half of the oil in a large saucepan and briefly saute the eggplant until brown, then add the onion and pepper. Next, add the garlic, zucchini, and tomatoes. Cook until a soft stew has formed, about 15 to 30 minutes.
Serve over rice in a bowl or on a plate
Add the salt, pepper, and basil. Sprinkle with the cheese and serve. You can freeze leftovers.
Nothing. We don't like eggplant. I made ratatouille once with egglplant but it didn't go over too well.
I want to try eggplant parmesan.
Egg Plant Pizza! That is usually all I ever make with eggplant just slice the egg plant about half inch thick slices or smaller , add some tomato paste some garlic and pizza toppings and bake just like pizza (450 for about 18 mins) Its super yummy
