Chicken and Egg Soup

Preparation Time: 15 Mins
Cooking Time: 35-40 Mins

Ingredients

  • 11/2 Cup of Chicken Stock
  • 1-2 tbsp extra virgin Olive Oil
  • 250 gm Chicken Breast - Chopped
  • 2 Eggs (As per Servings)
  • 1 Small Carrot - Chopped
  • 2 Celery Leak - Chopped (Avoid green part add only white part)
  • 100 gm Broccoli - Chopped (Optional)
  • 100 gm Button Mushrooms - Chopped
  • 1/4 tsp Black Pepper - Freshly Grounded
  • 2-3 tsp Vinegar

For Garnishing:

  • Spring Onions

How to make Chicken and Egg Soup

Step 1: In sauce pan heat olive oil, stir fry the chicken till it changes colour

Step 2: After that,add carrot, celery, button mushrooms, broccoli and stir fry all the ingredients for 5-10 mins

Step 3: When all the veggies and chicken are properly fried, add chicken stock, salt to taste and freshly grounded pepper. Mix well and allow it to cook on low flame

Step 4: When chicken stock starts boiling, add vinegar, stir and simmer on low flame

Step 5: Break two eggs in two separate bowls

Step 6: Put them in the soup in such a way that the egg yolks do not break

Step 7: Cover the lid and allow the eggs to cook keeping the egg white half cooked

Step 8: Once eggs are cooked beat gently with fork or spoon to break it into pieces

Step 9:  Simmer the soup till veggies get tender, switch off the flame and pour it to a serving bowl

Much like egg drop soup...which I love!
