Recipe of the Week: Peppermint Bark

 My step-daughter makes this every Christmas. It is so addictive!                    

                        

 

Peppermint Bark

Crushed candy canes, to yield 1 cup
2 pounds white chocolate
Peppermint flavorings, optional

Place candy canes in a plastic bag and hammer into 1/4-inch chunks or smaller. Melt the chocolate in a double boiler. Combine candy cane chunks with chocolate (add peppermint flavoring at this point if desired.) Pour mixture onto a cookie sheet layered with parchment or waxed paper and place in the refrigerator for 45 minutes or until firm. Remove from cookie sheet and break into pieces (like peanut brittle.)

I make a yummy version with graham crackers dipped in white chocolate and then sprinkled with crushed candy cane though I'm thinking of doing a dark chocolate version this year too!

I layer mine with dark choc. I love making it. it is easy and always a hit.

 That sounds really good. Having the white and dark chocolate would be pretty.

 I've always made it with white. I'm going to make some with dark chocolate to see how that goes over. Thanks.

I do a layer of dark and put it in the fridge. I actually mix my peppermint into the white and then pour the white on the dark. that way you dont have peppermint falling off everywhere
