Would this be a substitute for corn syrup?
The orange marmalade that I have has real corn syrup in it. Do you think it would work if I substituted it for the corn syrup in this recipe? Maybe I should add 3 tbsp marmalade???
My recipe: Almond Crunch Candy
3/4 cup sliced almonds
3/4 cup sweetened coconut
1/2 cup butter
1 1/2 cups granulated sugar
3 tbsp water
1 tbsp light corn syrup
1/2 tsp salt
Combine almonds & coconut and spread in bottom of buttered 9x13 pan.
In a saucepan, melt butter and blend in remaining ingredients. Cook without stirring until mixture reaches soft crack stage (290F). Remove and drizzle over almonds & coconut. Cool, break into pieces, store in air-tight container. Makes 1 lb of candy.
