Stuck in a meal funk.

Anyone else ever go through these phases?

I need some easy, quick dinners or a bunch of new crock pot meals. Its starting to warm up again and the house gets way too hot to have the oven or stove on for long. 

What are some of your go-to summer meals?

I love grilled chicken with a side of wild rice and veggie

how about lentils or quinoa you can make quinoa salad, pilaf make it with chicken broth just google recipes

I don't think I have ever had quinoa!

I get that way too. We make burritos, terriakhi chicken, breakfast for dinner and things like that

Crock pot buffalo chicken. 

1 family size pack of boneless chicken breasts. (All nice, and trimmed)


1 bottle of franks red hot buffalo sauce

1 packet of hidden valley ranch mix


1 tbsp of butter


Throw everything except butter in your crock pot. 

Cook on low for 6-8 hours. Shred the chicken, and add the butter. Leave in crock pot on low for an additional 1/2 hour. 


This chicken is spicy, delicious, and incredibly versatile. It makes great sandwiches, buffalo chicken pizza, and really anything you like spicy chicken in.

Quinoa is not bad but it took me some time to get used to.
I suggest doing research before trying it.  I always rinse mine very well and then toasting them before using them in any recipe.  I did use an organic prewashed one tonight that I did nothing to before cooking.  It was pretty good as is but the recipe called for cooking it in broth. ;)  Give it a try!  You might like it ;)
