It depends. I usually grind up whatever I have on hand and then mix it with the meat, eggs and breadcrumbs.

I think I finally hit on a recipe that I like but it's a little too spicy so it needs adjusting.  I used 2 packets of Lipton's Onion Soup mix to 2 pounds of hamburger, 1/2 cup of chopped red bell pepper plus the ingredients on the box of soup mix for meatloaf.  I didn't have enough oatmeal so I had to throw in some bread crumbs (italian) and I only used 1/2 the amount of water called for because I usually have a problem with my meatloaf cracking.  It was tastey but really oniony.  I'm going to try to reduce the 2nd package next time.

I really can't answer because I make it differently every time lol

the basics are there-but I do play around with the seasonings/spices or I may add some veggies to the mix lol

Quoting ScrChk23:

How much does the turkey change the flavor?

Quoting Khanfan:

Recently I had to switch to ground turkey. DH & DD love it.

I love the meatloaf cupcake w mashed potato idea.

It does change the flavor a bit. I would say it's more mild.

I sometimes use the Knorr Vegitable Dip packet and dump it in with the meat and one egg and some bread crumbs ! Its pretty fantastic.

I also just do basic meatloaf with onion, bread crumbs, garlic, pepper, ketchup, worstershire, and egg.

I chop a beet and some greens in the food processor.  Add to 2 lb of hamburger, 2 eggs, some almond flour, seasonings, and ketchup.  Mix well.  Bake at 350 for 1 hr.  Top with ketchup and bake for another 1/2 hour.

I usually chop up onion and bell pepper and saute that, set it aside and let it cool. Then take a pound of ground meat and mix in an egg, about a cup of Italian breadcrumbs, Worcestershire sauce, garlic powder and any other seasonings. I use a montreal steak seasoning and smoked paprika which makes a heavenly combo. Once the onion and pepper mixture is cooled, i add it to everything else. Then you can make the topping any way you like but dh tells me the meatloaf is excellent with or without it.
