I think that it is fun to bring something a little bit unusual
LEMON RICOTTA COOKIES
makes about 2 dozen
1/2 cup butter, softened
1 cup powdered evaporated cane juice (sold as "organic powdered sugar")
1 large egg
1 cup whole milk ricotta cheese
2 tablespoons lemon zest, freshly grated (use an organic lemon so you don' neat all of those nasty pesticides that settle in the zest)
1 tablespoon lemon juice
1 1/4 cups unbleached white flour
1/2 teaspoon baking powder
1/2 teaspoon salt
- Preheat oven to 350 degrees F.
- With an electric mixer, cream together butter and powdered evaporated sugar until light and fluffy.
- Add egg, ricotta, lemon zest and juice, and mix well.
- Mix baking soda, salt, and flour. Add 1/4 cup at a time to the mixing dough, allowing each to incorporate before adding the next.
- Drop by rounded tablespoons on a baking sheet lined with parchment paper or a silicone baking sheet. Cookie should be flat, not in a mound.
- Bake until cookies are golden around the edges. In my oven it took 20 minutes, but check at 15 minutes.
- Remove cookies from oven and let cool on a baking sheet.

This is a Russian cookie sometimes called little horn or crescent cookie. They are really delish!!!!
"Rugelach"
1 cup butter, softened
1 8oz pkg of cream cheese, softened
2 cups of flour
1/2 cup of sugar
1 tsp of cinnamon
1/2 cup finely chopped walnuts or pecans
1/2 cup of raisins (light)
Blend butter and cream cheese. Blend in flour. Divide into four portions and shape into balls. On a floured surface, roll out each ball to the size of a paper plate. Place between pieces of wax paper and place it in the refrigerator. It can rest there all night or all day ...
One at a time, place each circle of dough on a floured surface and sprinkle with 2 tbs of sugar, one-quarter tsp of cinnamon, 2 tbs of nuts and 2 tbs of raisins. Cut each circle into 12 triangular wedges (a pizza cutter works great) like a pie. Starting at the wide end, roll up each wedge into a crescent shape. Bake at 375 degrees for 20-25 minutes for a soft pastry, or 27 minutes for a firmer, sugar cookie consistency.
Makes about 36 to 40 cookies.
