When to start baking?!

Okay so I'm going to be making 4 bags of cookies for when my in-laws get here tomorrow. Any tips on how I could possibly make them today and them not get incredibly hard by the time they roll into town tomorrow night.

Also,  for Thanksgiving NIGHT I have a pumpkin and cherry pie to bake. Now again...shoudl I make them today or tomorrow morning?! Any hints on what makes a pumpkin pie great?! I'm using the Pillsbury Easy Pumpkin Pie reciepe.

Any and all help would rock! Thanks in advance!

This may sound weird but I promise you it works  LOL  When you make the cookies and put them in the container put 1 slice of bread in with it.  The bread will get stale but the cookies stay nice & soft.  I do this all the time.

Put some bread peices in with the cookies. My grandma does this and her cookies are good for two weeks. As for the pies, I would make them the morning of.

I am making pumpkin pies, just like last year, and I made mine the night before, they were fine for the next day! I try to do has much as I can the night before to cut down on time!

i was going to say this too! my friend made some cookies and they stayed soft for a MONTH! because of the bread thing! lol

I always make my pies the day before.  So I'll be busy tomorrow afternoon!

Shoot I have to make my cheesecake tonight. It has to be cooled overnight. Then tomorrow morning before heading into work, I have to make the chocolate ganache for the top and put it back in the fridge so it's ready for Thursday.
