 Anyone has a good recipe for pasta salad?

I like to do vegan medi style pasta salad. Cooked veggie noodles, diced red onions, spinach, sliced olives, black pepper, dry dill, homemade balsamic vinaigrette, and nutritional yeast (optional). Shake together in a covered dish, serve chilled.

1 box 3 color rotini, prepared according to the box.

1 cucumber

1 container cherry tomatoes

1 stick of pepperoni

1 block of sharp cheddar cheese

1 bottle italian dressing.

Make the pasta, rinse with cold water. Peel cucumber, slice and dice it. Same with pepperoni. quarter the cherry tomatoes. cut the cheddar into very small cubes.  Mix it all together in a large bowl, pour in dressing (almost the whole bottle) stir, chill. hooray.

 i don't have a recipe.  i always make it a bit different depending on what i have on hand & what mood i'm in.

Not really, we're not big on pasta salads. I can't eat gluten anymore and I'm not big on gluten alternatives... DH likes the ranch pasta salads though, like the betty crocker kind. I used to find it tasted better when you just take the ingredients they use and make it yourself.

Heres a salad that's not actually pasta, but a nice change :)

Quinoa Asian Slaw
prep time: 5 mins Cook time: 15 mins Total time: 20 mins Serves: 4
1/2 cup quinoa
1 cup water
1 cup cabbage
1/2 cup carrots
1/4 cup green onions
1/4 cup green pepper
1 tablespoon natural peanut butter
1 teaspoon fresh ginger
2-3 tablespoon water
2 teaspoon soy sauce
1/2 tablespoon sugar
2 tablespoon hoisin sauce
In a pot, combine rinsed quinoa with the water and bring to a boil. Reduce to a simmer, cover, and let sit for 15 minutes until all the water has been absorbed. Combine with cabbage, onions, and peppers in a large bowl.
In a small bowl, whisk together sauce ingredients. Pour over slaw mixture and stir well to combine. Cover, refrigerate and let cool for 1-2 hours until quinoa is cold and flavors have had a chance to blend together. Eat as a side or as a whole meal!

elbow mac green yellow red pepper sometimes orange onion salt pepper mayo

I've never been a big fan of pasta salad, but I had one at a party that I loved. It had cherry tomatoes, cucumbers, feta cheese & a vinegarette.
