better butter batter...lol

1 c canned whole-berry cranberry sauce
½ c raspberry preserves
2 c butter, softened
1 Tbsp powdered sugar

Combine all ingredient in a mixing bowl, beat on high for 5 min. Mixture should be
creamy. Spoon into a dish; cover and refrigerate 24 hours. Makes 3½ cups.


It's sooooooooooooo good!!! Anyone else have butter recipies to share???

 Caramel Apple Butter

 

  • 3 lbs apples
  • 1/2 cup water or 1/2 cup apple juice
  • 2 cups white sugar
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon ground cloves 
  • 1 teaspoon cinnamon 
  • 21 caramels

Directions:

  1. Peel, core and chop apples.
  2. Add apples and water/applejuice into a large pot.
  3. Over medium high heat cook apples until just tender.
  4. Remove apples with a slotted spoon-puree using a food mill, food processor, whatever you have on hand. (discard fluid in pot).
  5. Return puree to pot.
  6. Add the sugar stirring well.
  7. Return to medium high heat-you want mixture to bubble.
  8. *Reduce heat and simmer, stirring frequently until butter is thick and has a spreadable consistency.
  9. Add the ginger, cloves and cinnamon, stirring well.
  10. Add the caramels.
  11. Turn the heat up to medium low, stirring constantly until caramels are melted.
  12. Ladle butter into clean hot jars leaving 1/2 inch head space. Seal.
  13. Process in a boiling water bath canner 10 minutes for pints, 5 minutes for half pints.
  14. *Using a frozen saucer place a spoonful of butter in center. If no rim of liquid forms, your butter is done.

 

To make apple butter just don't add the caramels. I've also used honey instead of sugar without issue.

 Caramel Apple Pie

  • 1 recipe pastry for a 9 inch double crust deep dish pie
  • 1/2 cup packed brown sugar
  • 1/4 cup butter, melted
  • 1/3 cup all-purpose flour
  • 5 cups thinly sliced apples
  • 2/3 cup white sugar
  • 3 tablespoons all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon lemon juice
  • 20 caramels, halved
  • 2 tablespoons milk

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. To Make Taffy: In a small bowl combine brown sugar, melted butter or margarine, and 1/3 cup flour. Mix well and set aside.
  3. To Make Apple Filling: Place apples in a large bowl. Add white sugar, 3 tablespoons flour, cinnamon, and lemon juice. Toss until all ingredients are mixed well and apples are thoroughly coated.
  4. Spoon half of apple filling into pastry-lined deep-dish pan. Top with half of caramels and half of taffy mixture. Repeat process with remaining apple filling, caramels and taffy mixture. Place top pastry over filling and seal well (this is very important--if edges are not sealed, caramel will leak out all over). Cut steam vents and brush top crust with milk or light cream.
  5. Cover pie with foil and place on a baking sheet. Bake in preheated oven for 25 minutes. Remove foil from pie and bake for another 20 to 25 minutes, until crust is golden. Serve warm.

 Apple Pie Shots (not a shooting drink)

· one gallon apple cider

· one gallon apple juice

· 3 cups white sugar (optional)

· 1 liter of Ever clear

· 6 cinnamon sticks

· a pot that will hold at least 2.5 gallons

· glass bottles


Combine the apple cider, apple juice, sugar and cinnamon in large pot. Let mixture boil until cinnamon sticks start to unroll (about 1 hr).

Let mixture completely cool and remove cinnamon sticks (optional on removing them). Next add Ever clear.

Bottle and enjoy!


Please note: Make sure the apple cider/juice mixture is completely cool or the mixture WILL explode because of the Ever clear.

I get raw milk from a farm and I use the cream to make butter. I've never added anything to it but salt though. I will definitely have to try some of these.
