Canned food free Thanksgiving?

Anyone else cooking everything from scratch or using all fresh ingredients or from a carton rather than cans?

Yep we always cook from scratch. We are a preservative free household.

I only use canned tomatoes for pasta sauce. So yes our dinner will be can free. Most of our cooking has to be with our dietary restrictions.

I rarely use canned foods.  Jars yes, boxes yes but not cans.  We are not cooking turkey this year and the hostess is not using cans except for the canned olives the sons like.

Even kidney beans for say chili? I have TRIED soaking them for a day I think even two days but they never got soft...any suggestions for me?

They aren't supposed to get soft. The point of soaking is to get the toxins off of the beans. You cook them after soaking to soften them. I go through so many dried beans.

 Most of our Thanksgiving meal is made from scratch.

Only using canned cream off mushroom for the green beans if I do the casserole but I might not everything else will be from scratch

I do mostly fresh. I can't think of anything I plan to use that's canned. I will use lots of boxed chicken stock. And my dressing is 1/2 pepperidge farm, 1/2 stale bread. Other than that it's fresh I think. Even the cranberries and sweet potatoes.
