Forgotten Chicken

1 can Cream of Celery Soup

1 can Cream of Chicken Soup

1 packet of Onion Soup mix

6 Chicken boobs (I like the thin sliced ones).

2 cups of uncooked Minute Rice


Mix together the 2 cans of soup + 1 can of water, stir in the rice. Pour into a buttered 9x13. Lay chicken boobs on top of rice and sprinkle with onion soup mix. Cover with foil, cook at 275 for 3 hours.  That's it!

I made this last night for dinner, super success, my youngest who generally snubs rice, ate it all including the rice!!  It was delicious, and SO easy. Who doesn't love an easy recipe?

I wonder if I could substitute potatoes for the rice? Sounds good, maybe a little cheese sprinkled on top near the end. Yum! Lol

I'm just picturing it being really creamy with the soup, but I guess it soaks most of it while it cooks?

I do a similar recipe without the rice. I cook it separately and serve it over the rice. This would certainly be easier.

It is creamy (though I used the 98% fat free soup-all I could find at the store) so it wasn't over the top, it turned out like risotto, which is awesome to me so I was happy.
