This dish was good, but it could have been better. I used a fat free cream cheese in an effort to keep the fat content in check, but it ended up backfiring. Fat free cottage cheese does not melt and blend nearly as well as the fatty stuff. Next time, I will use the 1/3 less fat kind and see if that mixes better.
The dish was still really good, though! I love mushrooms and gravy, so this was good. The kids liked it and they all ate their chicken. You have extra gravy that you can serve on potatoes too. I served it with a side of mashed red potatoes and steamed broccoli. I will make this again. It was a nice comfort food meal... chicken and potatoes.
