Do you have easy chicken recipes for the crock pot?  Please share your recipe here! Thanks :)

Spicy Roast Chicken

  • 1 large whole chicken
  • 3 tsp. salt
  • 2 tsp. paprika
  • 1 tsp. cayenne pepper (you can cut this down if you don't care for the "heat")
  • 1 tsp. onion powder
  • 1 tsp. thyme
  • 1 tsp. black pepper
  • 1/2 tsp. garlic powder

Combine all the spices and rub under the skin of the chicken. Rub a bit on the inside too, and any leftover on the skin. If you are making a single chicken, you can roast it in your crockpot; just put it in the crockpot, cover and cook on low for 8 hours.

Crock pot Salsa Chicken

  • 4 to 6 chicken breasts
  • 32 oz. salsa (2 16 oz. jars)
  • 1 15 oz. can corn, drained
  • 1 16 oz. can black beans, drained and rinsed

Lay chicken pieces in bottom of crock pot. Top with rest of ingredients. Cover and cook on low for 6 to 8 hours until chicken is done. Serve with rice, or with flour tortillas, sour cream, black olives, tortilla chips, etc.

Crockpot Chicken Cacciatore

Clean any unwanted fat from chicken pieces. Add all ingredients to crock pot, mix well, making sure chicken is covered. Cover and cook for 7 to 9 hours. Serve over pasta.

About This Recipe

"This creamy crock pot meal is comfort food at its best! It reminds me of chicken cordon bleu, without the fuss!"

Ingredients

    • 6 boneless skinless chicken breasts
    • 3/4 cup butter or 3/4 cup margarine
    • 1 teaspoon italian seasoning
    • 1/8 teaspoon white pepper
    • 1 (8 ounce) packages cream cheese
    • 1 (10 3/4 ounce) cans cream of chicken soup
    • 8 ounces fully cooked diced ham ( 1 cup)
    • cooked rice or pasta

Directions

  1. Dice chicken, and place in crock pot.
  2. Cut butter into pieces, and distribute evenly over chicken.
  3. Sprinkle Italian seasoning and white pepper over top, and place lid on crock pot.
  4. Cook on low for 7-8 hours.
  5. At end of cooking time, cut up the cream cheese, and drop into crock pot, together with the diced ham and chicken soup.
  6. Stir, then replace lid.
  7. Cook on high until cheese is melted.
  8. Serve hot over rice or pasta.

I sub chicken thighs for the pork chops in this one.


Crockpot Pork Chops & Rice

4 pork chops

1 c. uncooked long grain rice

1 envelopes onion soup mix

1 can cream of mushroom soup

2 c. water

Pour rice into crockpot.  Sprinkle with 1/3 onion soup mix. Place pork chops over rice.  Pour mushroom soup over all.  Sprinkle remaining onion soup mix over soup.  Add water.  Cook on low for 8 to 10 hours.

Serves 4

About This Recipe

"A very delicious chicken dish with mushrooms, zucchini and green peppers in a flavor filled tomato sauce. Wonderful served over rice."

Ingredients

    • 1 (3 lb) chicken, cut up
    • 2 tablespoons olive oil
    • 1 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 medium onions, chopped
    • 2 minced garlic cloves
    • 1 (1 lb) can diced tomatoes
    • 2 tablespoons fresh basil, cut up
    • 1 lb fresh mushrooms
    • 1 green peppers, cut into strips
    • 2 medium zucchini, cut into 2 inch chunks

Directions

  1. Salt and pepper chicken and brown in olive oil in a skillet.
  2. Remove chicken to crock pot.
  3. Saute garlic and onion in same skillet and add tomatoes and basil; stir occasionally and cook for 5 minutes.
  4. Add vegetables to crock pot, then pour tomato mixture over.
  5. Cook on low temperature for 6 to 8 hours.
  6. If desired, thicken sauce and serve over rice.
