It's one of my favorite veggies. Sometimes in the summer we make zucchini grinders, which is sort of like a hot meatball sandwich but with sautéed zucchini instead of meatballs... Really yummy, especially if you sprinkle a little mozzarella on top, wrap it in foil, and bake for about 10 minutes.

We did this last week and my son was ecstatic. He thought it was the best dinner we'd ever had, it was very cute.
