Smarter Celebrations: Quick Easy Fresh Party Food

There are so many reasons to celebrate in spring and summer, and most of these events are always a little more fun if there is some delicious, simple, fresh food. If you're the host, or if you're bringing something to a potluck or BBQ, it's nice to a have a few quick, easy ideas to rely on so you can relax and enjoy celebrating too. Here are some party foods that even kids will love:

1)   Use any bread or biscuit dough, sprinkle some of your favorite grated cheese and herbs on top, and bake until ready.

2)   Buy some pizza dough, roll it out (kids love to help) and cut small circles. Create tiny mini pizzas which you can top with anything you like, from pepperoni to cheese and mushrooms, or just a simple little grape tomato with a bit of fresh mozzarella. After baking, sprinkle with fresh chopped basil for an added bite of freshness and flavor.

3)   Fruit salad cups. You can make a kids' batch, with just fruit, or even some yogurt on the bottom, and then dress up the grown-up cups with a splash of Proseco, orange liquor, or other fruit brandy for a celebratory kick. Sprinkle some chopped fresh mint on top for a sophisticated and refreshing punch.

4)   Skewers. Here's a fun easy way to present many fresh foods, for grownups and kids too. Just chop up and skewer your favorite combinations of fruit, vegetables and protein, and get creative too. Consider grape, apple, pear and cheese skewers with a balsamic dipping sauce on the side. Or cucumber, mozzarella and tomato with a basil pesto drizzle on top. Of course, you can always combine some meat as well, if you feel like cooking. Like chicken or beef strips with zucchini or broccoli and an Asian inspired dipping sauce, for instance.
