i bought a bag of frozen kale from trader joes the other week but wasn't sure how i should make it so the kids would try it.  well we're running low on food at home, waiting till payday friday to go shopping, so i decided to just go ahead & make it as is.  i made some eckridge sausages & scalloped potatoes.  i heated up the kale & sprinkled with a pinch of sea salt.  my son took one bite & said "mmmmm" & proceeded to gobble it up.  my daughter, who loves spinach, just thought it was spinach i hadn't cooked that long.  so now i have another healthy green veggie to add to our meals.  yeah!

If they like beans try this soup.

Its 2 can roasted garlic chicken broth (or just regular and add your own garlic)
2 cans cannelli beans (drained)
1 boneless ham steak (or you can use 6 slices of bacon cooked and crumbled)
1 medium yellow onion chopped
6 cups of chopped kale

Dice the ham and cook in soup pan. Add the onion and sautee slightly. Add the beans, broth and kale. Bring to a boil. Then cover and simmer for 25 minutes.

This is ds1 favorite soup.

lol!  it's funny that they eat things like spinach, edamame, & now kale but are resistant to the usual favorites like carrots.

I have fed it to my bearded dragon but never tried it. Maybe I will. The kids could use more veggies
