Coconut Beer Shrimp With Sweet and Tangy Sauce from the Just A Pinch site by Leah Stacey!

                      

Ingredients

4eggs
1 cbeer
3 tspcreole seasoning
1 1/4 cflour
2 Tbspbaking powder
48 largeshrimp, peeled and deveined with tails
1bag coconut, shredded
2 coil
SWEET AND SOUR SAUCE
2 corange marmalade
1/4 cdijon mustard

1 1/2 Tbs












horseradish 

Directions

 Combine eggs, beer, 3 teaspoons creole seasoning, flour and baking powder.

 Blend well.

 Dip the shrimp in beer batter and roll in coconut.

 Fry in oil heated to 350 in deep fryer, wok or deep saucepan.

 The oil should be at least 1-1/2" deep.

 Drop shrimp in a few at a time and fry until golden brown.

 Remove and drain on paper towel.

 SAUCE - Blend together dipping sauce ingredients.

Lemon Glazed Blueberry Tea Bread from the Just A Pinch site by Patti Jones!

            

Serves:makes 1 loaf
Prep Time:
Cook Time:

Ingredients

Bread:2 cups all purpose flour
1 Tbspbaking powder
1 csugar
1/4 tspsalt
1 tspfresh lemon zest
1-1/2 cfresh blueberries
2 tspfresh squeezed lemon juice, or more to taste
3 Tbspvegetable oil
2large eggs
1 cmilk
Glaze:2 tablespoons of fresh lemon juice
1/4 cup of sugar
1 teaspoon fresh lemon zest
combine all ingredients and brush or drizzle over warm bread while still in the pan.

Directions

 Combine flour, sugar, baking powder and salt
Stir in blueberries and the lemon zest
In another bowl, beat eggs; add milk and oil
Stir into the dry ingredients mixture, just until moistened.
Pour into a greased 9x5 loaf pan.
bale at 350 degres for one hour or until toothpick tests clean.
Prepare glaze ingredients.
After removing loaf from the oven, while still warm, brush or drizzle the glaze over the bread. Let cool for 10 minutes, remove to a wire rack to cool completely.
Cut and enjoy! This is a great goodie gift!
