Drumstick Skillet with Rice
ready in: 30-60 minutes
serves/makes: 4
ingredients
1 package chicken drumsticks
1 tablespoon butter
1 2/3 cup water
6 ounces rice
2 cups vegetables such as green beans, peas and/or carrots
herbs and spices of your choice

Melt butter in a skillet over medium heat. Add chicken. Cover and cook 8 minutes, turning once. Remove chicken. Add water, rice, seasonings, and vegetables, stir well. Top with chicken.
Bring to a boil. Reduce heat, cover and simmer 20 to 25 minutes or until liquid is absorbed and juices run clear when chicken is pierced. Remove from heat; let stand covered 5 minutes before serving.

We tried to make a casserole with them. It didnt work too well LOL We have a foreman's indoor grill so i will try the marinaded thighs one night. I can no longer eat breasts, they seem too dry to me anymore.

Bone-in thighs are my favorite! When I need something really quick and easy, I just toss a pack of thighs in a baking dish with a bottle of barbecue sauce, italian dressing, any of the mrs dash or store brand bottled marinades, or just margarine and any herb blend I want and bake it at 350 for an hour.
