Well I heated up leftover pizza... Riley loved it. lol

I made a chicken meatloaf last night with grated carrot and finely chopped celery and onion and my son liked it! He is very picky about vegetables!

I like to cook and bake but sometimes he gets so boring!

I used:

  • 1lb ground chicken
  • italian seasoning
  • marinara sauce (approx 3/4 cup) plus extra to spoon over the top
  • 1 egg
  • 1/2 cup of rolled oats ground up in a food processor
  • 1 carrot finely shredded
  • 1 celery stalk chopped up real tiny
  • 1/2 small onion also chopped tiny
  • Lawry's salt (maybe 2 tbsp's) I didn't measure

Mix all ingredients together gently, don't over mix. Transfer to meatloaf dish, Spoon remaining sauce over loaf and bake at 350 for 1 hour.

I wanted to make pizza bagels so I went to the clearance section and used what we had at home, it ended up being so delicious! Even my dad had 3rds lol

Onion Bagels
Spinach tomato sauce
Mexican Taco shredded cheese
Pepperoni

I think it was all the flavors combines. It was so good and I'm sure any kid would love to help make it!

That sounds good! Where do you get spinach tomato sauce? Or, did you make it? I love spinach!
