I've heard all the great things about it so I thought I'd give it a try.
I made a Greek Quinoa Salad last night. It was super easy to make and tastes so good.
Have you tried Quinoa? Do you like it?
Here is the recipe:
1 cup uncooked quinoa
1 cup diced tomatoes
1 cup diced cucumber
1 cup crumbled feta cheese
1/2 cup sliced kalamata olives or 3/4 cup sliced black olives
1/4 cup diced red onion
1 teaspoon fresh chopped mint
1 teaspoon fresh chopped parsley
1 teaspoon fresh dill
the juice of 2 lemons (3 - 4 tablespoons)
2 tablespoons extra-virgin olive oil
coarse salt and fresh black pepper, to taste
- Cook the quinoa according to package directions. Allow to cool.
- In a large mixing bowl toss the quinoa, tomatoes, cucumber, feta, olives, onions and herbs together.
- Drizzle the lemon and oil over it and toss well. Season to taste with salt and pepper and add more lemon or oil if desired.
- Serve chilled or at room temperature.
