Since my son started karate I have realized that it's going to be easiest to just make crock pot meals on those days because DH will get home from work before we get home from karate and he is going to need to eat and go to bed (I would have him make dinner on those days but he gets up at 2am, works a 14-16 hour day, and comes home to shower, eat, and sleep before doing it all again the next day).

The other day I put deli roast beef in the crock pot with French onion soup mix and had rolls set out for French dips, and that worked out well. Tomorrow will be ranch pork chops (http://www.crockingirls.com/recipes/ranch-pork-chops/) and I'm just looking for your favorite ready-to-eat crock pot meals that don't require any preparation after the cooking.

Oh, PS I'm kind of hoping for more "summer" meals, like not so much chili or stews.

chicken taco chili! Or other types of chili woul dbe good too. Or lasagna. Soup...? I've made taco soup in the crock pot before.
