I am looking for an inexpensive way to change the dark, wood paneling in out dining room to something brighter. Besides painting, any ideas?

Hmmm...what else can you do besides paint it? Or take it off....

Seriously-remve the paneling.

I've got friends and family in construction and remodeling-they've seen it all-just take the time to remove the paneling

 I'd pull it off.  If you paint it, you either have to use detail brushes to get the places in between, or you have to use a type of mud or plaster to fill in the lines anyway.  I don't think wallpaper would go very well with the paneling underneath, and would be mroe work than painting anyway.

At our old fixer upper house, We used a machine to add texture to the paneling and then painted it.  It wasn't very noticable that it was paneling.  Then, we just used a thick roller and it filled in the cracks just fine.

Agree...and paint is probably safest. My first house we took the panelling down to find they used tar to put it up...so we had to replace the drywall too.
