It's a "family original," as far as I know...lol...at least, that's what my mom tells me! It's a regular favorite around here. :-) I always make a ton, because I try to have leftovers...but the kids usually finish it off at breakfast, if they can!
2 lbs. ground sirloin
4 cans sloppy joe sauce
2 lbs macaroni or shell shaped pasta
1 32-oz. container of low-fat cottage cheese
3 cups shredded, sharp Cheddar cheese
Set oven to 350 F. Brown ground sirloin in a large Dutch oven pan and drain off fat. While beef is browning, boil pasta as directed and drain.
In the Dutch oven, mix the ground sirloin with the sloppy joe sauce. Mix in cooked pasta and cottage cheese.
In an 11" x 15" glass baking dish, spread casserole mixture. Sprinkle shredded Cheddar on top. Bake at 350 F for 25 - 30 minutes, or until cheese is melted and beginning to brown.
Yield: 16 servings.
