Help.... my travel friend.... CRUISE info wanted

I have made the executive decision that John and I are doing something special in 2015 for our 20th anniversary. 
John is on board with this.
Our anniversary is in Sept, and we want to go on a cruise in the worst way! However, with kids going into: 11th grade, 8th grade, 4th grade and 3rd grade... we are thinking that Sept isn't the best time to do it. Then I want to go someplace warm, so John is thinking Jan when anything will be warmer than NY. 

So, who's gone on one... what line/ship do your recommend? 

We want all inclusive, don't want to worry about each nickle and dime while on the ship.

I did a quick search online and if I wasn't as smart as I am (and had passports) I would be saying F to my mortgage and we'd be going on on Feb 3 of this year....

Im not a cruiser... But have good friends who are. Celebrity is good cruise line... No kids stuff.. ( carnival if kids r cruising). Celeb out of ft lauderdale, st barts, st marteen, all super romantic beaches ( have been to those islands just not by boat). Dont 5-10 you... If u r BIG drinkers ( more then 6 a day) then opt fir the drink package at 55 a day. Less then 6 on vacation, not worth that xtra.
I dont recommend mexico cruises. 2 friends have done and didnt like. So, id pick other venue.
Will also say november good time ( according to my friends)
2 good things about celeb; mature but not old crowd. So no one screaming up hallways at 3am.
Select seating; so u dont HAVE to sit at big table w strangers if u dont want. U can opt for romantic 2 seat table few nights..

Nov. should give the kids a little time to settle into classes and teachers. We want to do something special. We never went on a Honeymoon, our first anniversary we did an over night (a gift from his Mom) at a little inn that we loved, then in 2001 we went to Vermont for a weekend (that cost us all of $300), beyond that just the overnight at the hotel for the fire dept dinner... but we have a couple of years we didn't do that.

Hi! I've been 3 times and love it! The Carribean is warm and friendly. FAV was Miami to Key West to Virgin Islands. On a Carnival ship, it was fun, but as a budget priced cruise ship there were lots of drunk college kids making the common areas loud. On my Royal Carribean ship it was a moneyed, older, retired crowd that suited me more. And the one from Miami, to Mexico, the tourist stops, (be sure to stick with ship escorted tours, pricier but safest), the Mexican people so friendly, the Mayan historical stops were amazing, but unfortunately, drug violence and crime in general, especially aimed at Americans, would make me think twice about traveling there again soon. The ships are very clean and safe, but I would stick to cruise lines with a good safety reputation. Buy in advance, but do look into using a travel agency and buying travel insurance. We usually travel in Feb or March, before or after spring break. Happy Traveling!
