Tostadas de Tinga

Boneless chicken

1 Med Onion

1 Small can chipotle peppers

2 Large tomatoes

1 pack of  tostadas (hard tortillas)

Queso fresco(mexican cheese)

Sour cream If desired

Shredded lettuce if desired

Boil Chicken with just a piece of onion and salt. When chicken is done, let cool and shred into pieces, (like pulled pork) fry the chicken with sliced onion (whole med onion) fry it till chicken turnes a little brown.

While chicken is frying, make the salsa

Take the 2 whole tomatoes, 1 small can chipotle, salt to your taste, fill quarter of the pitcher with water and blend

Add salsa to chicken (with a little bit of ketchup) for flavor)  when chicken and onions are ready. Let it cook for ten minutes on medium heat, then it's done!

Put Tinga on a hard tortilla, after adding sour cream, and cheese.
