
The Spring Holidays, in my opinion, are just as much fun as the winter ones, with somewhat less stress. They also seem to be just as tradition filled, even though they don't revolve around present giving.The Spring holidays, to me, mean religious celebrations (big and small), family dinners, enjoying the warmer weather and a kick off to outdoor fun.
Every year when I was a child, my mom made a lamb cake. It was a stand alone 3D cake, and it sat in a bed of green coconut. I was always mesmerized by the colored coconut. My husband's Easter memories also involved lamb - roasted leg of lamb with garlic. Our first Easter, when we attempted to combine both traditions, made for an unpleasant holiday. He was expecting lamb, and he got a lamb cake. No garlic involved.
When I was a child, we always hid plastic Easter Eggs. One year, my uncle drove up for dinner on his brand new motorcycle. We were all enamored of it and he took each of us for rides. When it came time to hide Easter eggs, it was only logical (to my 8 year old mind) to hide an Easter egg in his tailpipe. It wasn't until much later that evening, after he'd left our house and gone on an extended ride, that we discovered the forgotten Easter egg - melted all over the inside of his tailpipe. It was an expensive lesson for us.
We have the biggest family in our extended family, and we have the biggest house, so we are often the home to host the Easter dinner. Every year, we try some new dishes, but we always have carrot souffle, corn pudding, baked ham and fluffy crescent rolls. It's a comforting monotony that I wouldn't change for anything. I love to have people over, love to decorate and feel warm and fuzzy inside when I see everyone around the table - even if we use plastic forks and paper plates. It's the family together that counts - hearing the uncles tease the little kids, listening to Grandpa's war stories and watching the babies grow. I'm anxious to have people over this year - I have several new decorating ideas that I've found on Pinterest and I'm ready to wow my family.
