Panettone

  • 2 1/2 tsp dry yeast
  • 2 cups plus 1 tbsp bread flour
  • 3/4 tsp salt
  • 5 tbsp sugar
  • 3 tbsp dry skim milk
  • 3/4 cup plus 1 tbsp lukewarm water
  • 5 tbsp sweet unsalted butter
  • 1 medium egg
  • 3/4 tsp vanilla extract
  • 1/2 cup raisins soaked in rum (drained after soaking)
  • 3 tbsp candied orange peel slices (I have substituted dried mixed fruit)
  • A little orange zest

Put ingredients except raisins, candied fruit, and orange peel in your bread machine in the order recommended by the manufacturer.  Select sweet bread setting and then start.  Do not use the delay timer.

Add the raisins, candied fruit, and orange peel just before the end of the 1st kneading, some machines have a beeper that sounds at this point.

After baking is complete, remove and cool slightly.  Great with a little butter or as French toast!

Let us know if you try this-I know Panettone is often given as gifts at the holidays.

Do you have to use rum?I dont have any.

You could soak the raisins in water!  It's all drained off anyway.

Or water or applejuice with rum extract added to soak (the flavoring-stuff sold right next to vanilla in the supermarket) if you still want the flavor but not pay for a bottle of rum.
