Recipe uses the dough cycle of bread machine only.

Challah
1 cup warm water
2 3/4 teaspoons salt
1/3 cup granulated sugar
2 large eggs, beaten
1/2 cup vegetable oil
4 1/4 to 5 1/5 cups unbleached bread flour
1 tablespoon active dry yeast
 
Egg Wash:
1 large egg
1 yolk

Sesame seeds for sprinkling (optional)
  1. Place the ingredients into the bread machine pan in the order suggested by the manufacturer.
  2. Set machine for Dough cycle and press start.
  3. When cycle is complete, remove dough and divide into three sections and then braid the sections into a loaf.
  4. Grease or line a baking sheet with parchment paper. Place bread on onto prepared baking sheet. Generously brush bread with egg wash (reserve remaining egg wash for later). Sprinkle on sesame seeds. Place whole baking sheet into a large plastic bag.
  5. Allow bread to rise 30 to 40 minutes or until almost doubled in size. Brush again with reserved egg wash.
  6. Preheat oven to 375°F (190°C).
  7. Place bread in oven, and immediately reduce heat to 350°F (175°C). Bake for 30 to 35 minutes.

Makes 1 loaf.

I have a wonderful Challah recipe. I use it every week (we are Jewish).

3/4 cup water

3/4 cup margarine (pareve, meaning there is no dairy)

2 eggs

1/2 tsp vanilla extract

3 and 1/2 cups bread flour (I use 2 and 1/2 cups white and 1 cup whole wheat)

1/3 cup sugar

1 tsp salt

1/4 tsp cinnamon

2 and 1/4 tsp active dry yeast


Set machine to dough setting. Line a baking sheet with parchment paper. Preheat oven to 325 degrees.

Once the bread is ready, remove from the machine and divide into 2 pieces. Divide each of these 3 or 4 times (I like the 4 strand braid myself) and roll each between your hands until they are about 18 inches long. Braid the 3 or 4 strands together and set on the baking sheet. Do the same with the second set.

Cover the loaves with a clean kitchen towel and let rise in a warm place (I find the top of the preheating stove to be perfect) for 30 minutes. Remove the towel. Brush the bread with an egg wash (1 egg yolk beaten with 1 Tbsp water), sprinkle the top with poppy or sesame seeds. Bake at 325 degrees for 30 minutes.

This is our favorite challah recipe, we don't use any other now.

Makes 2 loaves.
