Warm Spinach and Artichoke dip
1Tbsp Canola Oil
1 Med Onion finely chopped
3 Cloves garlic chopped(1 Tbsp)
1- 9 Ounce Package frozen Artichoke Thawed, rinsed , patted dry ( I couldn't find frozen so I got a can of artichokes-not heavily marinated)
1-10 Ounce frozen chopped spinach, thawed and excess liquid squeezed out
1/2 cup Reduced fat sour cream
2 Tbsp Lite Mayo
1/2 Cup of Neaufatchel Cheese( reduced fat cream cheese)
2 Ounces of part-skim mizzarella cheese shredded
1/2 tsp Salt
1/2 Tsp Pepper
Cooking Spray
Preheat oven to 375
Heat oil in Medium skillet
Add Onion and cook until softened 3-5 minutes
Add Garlic and cook 1 minute
Remove from heat and let cool
In food processor add all ingredients except Onion and garlic mix Process until smooth.
Add Onion garlic mix and pulse a few times
Add additional mozz on top if desired.
Transfer mixture to 8-9 inch pie plate lightley coated with spray Bake 20-25 minutes.
