Can one of you BEAUTIFUL BORICUA ladies... please please pretty please recommend an easy dessert for me to make. My boss' bday coming up and from what I've heard he hates the office even knowing or any sort of mention... So I figured if I made something to share with everyone that is native to his land... We could all celebrate his bday with him quietly - how he likes it! LoL so please - an easy dessert recipe that holds up to long office days well.

I can't make flan for my life, so I would probably not be able to make anyof the tohers mentioned :(
Did you end up receiving or trying a good PR dessert recipe for your event? If you did or didn't, here is a simple, good one to try for any occasion: Pastelillitos de guayaba (guava pastries). Requires three ingredients. Sheet pastry (frozen section), guava paste (I use Goya's which comes in a bar), you may also find other guava pastes at grocery stores, and the last ingredient, confectioner's sugar.
Separate pastry sheets (you'll get two sheets in a box, and each sheet is tri-folded) Unfold the tri-fold, and separate into the 3 separate sections. Work with one section at a time. Spread a section out on a cutting surface.
Cut small 1/2" squares of paste and place the squares on the pastry section, one next to the other leaving space in between them. I usually get two rows of paste squares per sheet section with about 8 squares on each row.
Once done, place another pastry section on top, sandwiching the paste in between. Using a pizza cutter (or knife) cut the 'sandwich' vertically and horizontally, each cut piece will have a paste square. You've made the beginning of your pastelillito.
Take a fork and use it to press together each of the 4 sides of the pastelillito sealing it. Once you have all the little pastelillitos sealed put them in a baking sheet.
Bake at 400 degrees 6 minutes. Turn the baking sheet 1/2 turn, and bake for another 6 minutes. Keeping a careful eye that they don't burn, they should turn light to medium golden brown. Take out, let them cool on a cooling rack. When you are ready to serve them, use the powder sugar (confectioner's sugar) and sprinkle the top of each pastelillito. Each one is a little morsel.
My family and friends love them, and ask that I bring some at each get together. Wish I had a picture to include.
