I use butter in my cooking. No sprays or margine, just plain butter. I've even made some myself.

My question is what is with Irish butter? I bought some the other day and it was great (just like Irish cheese) and had a different flavor. It doesn't taste like they use yak or goat milk in it (and yes I have had both) so what is the reason for the difference in texture/taste?

Some butters made in Europe are fermented a bit and have a higher butterfat. I do prefer Irish or French butter to basic supermarket stuff but I'm not sure of all the process differences.

I use real butter frequently too.  I've never heard of Irish Butter though.

It would be churned more, is my guess; plus in Europe, their cows eat their grass, which is different than ours.

Isn't it like 'European' butter: they culture the milk before churning it, so it's like butter made of yogurt.

It is different because of the way the cows are fed. If you bought a local, organic butter, it would taste more like the Irish, and less like conventional
